In the souks of the medina of Fez , the exposed dromedary head, still holding a bunch of fresh coriander , clearly indicates the nature of the meat on offer. The consumption of camel or dromedary meat , common in several regions of North Africa and the Middle East, is renowned for its low fat content and its nutritional properties adapted to arid climates .

In local traditions, presenting the head remains a way of guaranteeing the authenticity of the animal , especially for connoisseurs who visually differentiate the camel (two humps) from the dromedary (one hump) . The bouquet of herbs, for its part, is as much a matter of tradition as a touch of visual humor in the commercial display.

In a world where dietary standards vary from continent to continent, it's worth remembering that in France, snails and frogs are also on the menu. Surprise is always relative.
